I wish I had a photo of this dish to add. It’s beautiful, scrumptuous and fast to get on the table. I might add that it’s easy on the pocketbook.
A great weeknight gluten free dinner.
Serves 2
Ingredients:
- 4 thinly sliced turkey cutlets
- 1 medium red Bartlet pear, seeded and sliced skin on
- 4 T butter, divided
- 2 tsp Sage, dried
- Salt & Pepper to taste
- 1 bunch fresh spinach, thoroughly washed
- 1 container Crumbled Bleu Cheese
Directions:
Heat a medium frying pan over medium-high heat. Melt butter. Add 1/2 of the sage to the pan. Salt & pepper turkey and dust with sage. Cook the turkey on both sides until done through. About 5-6 minutes. Cook in batches if you wish, just keep warm. Remove turkey. Add the pear slices and the remaining butter and cook until they’re soft and starting to carmelize. About 5 minutes. Just before they’re done, add in the spinach and the remaining sage. Cook until the spinach has wilted. Very fast.
2 cutlets per person with half of the spinch pear mixture. Sprinkle bleu cheese on top and serve.
